I knew right away that I wanted to do a light, savory entree, and I'm so thrilled with the recipe I came up with: tender chicken breast fillets wrapped around fresh herbs and a trio of melty cheeses, topped with a creamy, tangy sun-dried tomato pan sauce. It is the perfect entree for this time of year, when the days are warm and sunny, and the evenings are still cool, when you want something delicious and filling for dinner without the heaviness of a midwinter meal. Breakfast food is so good that I bet you eat it for lunch and dinner occasionally too, just like I do. Yesterday, we had these amazing breakfast sandwiches for lunch. My favorite buttermilk biscuit recipe filled with salty cheddar cheese and fresh chives, surrounding layers of smoky ham, creamy scrambled eggs, and more melty cheddar. They were so good!! In the bowl of a food processor, combine flour, baking powder, and salt, and pulse a few times to combine. Add cheddar and chives, and process again briefly just to combine. Add butter pieces and pulse again until mixture is crumbly. Add buttermilk and pulse just until mixture comes together. On a well-floured surface, pat dough into a long rectangle about 3\/4\" thick. Cut the rectangle into 8 equal squares and place the squares on the baking sheet. Baking for about 18 minutes until golden. Remove from oven and allow to cool.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nWhile the biscuits are baking and cooling, heat the ham slices in batches in a large nonstick skillet. Set the ham aside on a large plate. In a medium bowl, combine eggs with a splash of milk and a pinch of salt and pepper. Scramble the eggs and cook them slowly until firm.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nSplit the biscuits in half, place two slices of ham on each bottom biscuit (folded in half if necessary), and top with eggs, sliced cheddar, and biscuit tops. Eat warm. I packed these darling, delicious little desserts in half-pint canning jars and toted them to book club, and people went totally nuts for them! And I confess, I thought they were so good I almost didn't want to share them! Tyler Golberg contacted me last Fall with the cutest Spring project idea--DIY Birds' Nests--and I'm happy to have Tyler here today to present his project to you! All text and photos in this post belong to Tyler Golberg.\u003C\/i\u003E\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nI love Easter dinner and all the credit goes to my very talented mom. She has always had a knack for not only making delicious dishes, but for combining the food with the presentation. I was particularly fond of one recipe that we made together last year, the Easter bird nest. It is very simple but adds a nice touch to a table setting.\n\u003Cbr \/\u003E\n\u003Cbr \/\u003E\n\u003Cdiv style=\"text-align: center;\"\u003E\n\u003Cspan style=\"font-family: Great Vibes; font-size: 200%;\"\u003E\nIngredients \u0026amp; Materials\u003C\/span\u003E\u003C\/div\u003E\nBefore getting our hands messy, let’s gather up the necessary supplies.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nbag of Robin Eggs candy\u003Cbr \/\u003E\n6 Shredded Wheat biscuits (the big ones!)\u003Cbr \/\u003E\n3 Tablespoons brown sugar\u003Cbr \/\u003E\n3\/4 cup butter\u003Cbr \/\u003E\ncupcake pan and liners\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nThese amounts will create about 24 nests. We used one nest per place setting so there were about a dozen leftover that we later set out as snacks. As an additional option you can add coconut dyed green with food coloring to include “grass” to the nest. Melt the butter and mix with the Shredded Wheat and brown sugar in a bowl. After completing this step, set the oven to 350°F so it can be ready.\u0026nbsp;Grab the cupcake pan (with the liners in place) and start scooping in the mixture. I used a tablespoon to scoop to try and keep the sizes consistent. Use your fingers to form up the nests in the cupcake pan.\u0026nbsp;Place the pans into the oven for about 10-15 minutes. The nests will be crispy after being fully cooked. When the nests are ready, pull them out and let them cool completely.\u0026nbsp;For the coconut lovers out there, now is the time to add in the grass. Put the coconut into a plastic bag along with the green dye and shake. It is best to start off with less food coloring and add as needed. When you are happy with the level of green, pull the coconut out and add it to the nests. The final step is to simply add the chocolate eggs to the nests. I found that 3 eggs works the best for fit and looks.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nFor the final setting we used a clear plate on top of a white opaque plate with a fern in between. The business cards that get handed out at Alt Summit every year are really spectacular, ranging from gorgeously thick letter-pressed cards with painted edges to little handmade gifts to works of art. Last year, I handed out \u003Ca href=\"http:\/\/luluthebaker.blogspot.com\/2013\/01\/paint-dipped-spoons.html\" target=\"_blank\"\u003Ecolor-dipped wooden spoons\u003C\/a\u003E that I had hand-dipped in glossy, sunshiny yellow paint and tied to my cards. People loved them, which was fantastic, and I realized that I wanted this year's cards to be equally creative and well-received. I originally had vague ideas of handing out spices in tiny packages, and after many, many, many revisions, endless materials research, and lots of back and forth, I ended up with these little cork-topped glass vials filled with sea salt, with my name and info on the self-printed label.\u0026nbsp;I'm so pleased with how they turned out, and they were just as fun to hand out as I had hoped! With little kids still home during the day, I occasionally end up eating whatever I make them for lunch: peanut butter and jelly sandwiches, macaroni and cheese, chicken nuggets. And most of the time when I get lazy and eat what my kids are having, I know in my heart that I'm letting myself down. It's not that there's anything so wrong with my kids' lunches--I always include lots of fresh fruits and veggies, so they're plenty nutritious--it's that they're so terribly unimaginative. Borderline boring, even. I always think to myself as I'm putting that chicken nugget in my mouth, \"Melissa, you can do so much better!\"\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nThat's where really easy, delicious dishes like this soup come in to save the day! With the teeniest, tiniest bit of forethought, I can whip up a pot of this satisfying soup in 20 minutes and have lunches for three or four days. Wash, dry, and iron the fabric. It almost pains me to wash brand new fabric because it goes from being so smooth and shiny to looking not-so-nice, but since these will be napkins and they'll have to get washed occasionally, better wash that fabric first!\u003Cbr \/\u003E\n2. Lay the two fat quarters out on the cutting mat, right sides together, and line up the edges as best you can. Chances are they won't match exactly, and that's ok. Just try to arrange them so you have to trim as little as possible.\u003Cbr \/\u003E\n3. Chances are the fat quarters also won't be perfect rectangles. Find the straightest edge of your fabric sandwich and use it as a guide to carefully trim the other three sides to make a perfect rectangle.\u003Cbr \/\u003E\n4. Cut the fabric sandwich exactly in half length-wise and exactly in half width-wise. You should now have four matching fabric sandwiches.\u003Cbr \/\u003E\n5. Ok, there are various methods for attaching the ric rac, and after doing a little experimentation and getting a little frustrated, I'm giving you my favorite. If you do ric rac a different way, by all means! Cut four pieces of ric rac to match the four edges of your fabric sandwich.\u003Cbr \/\u003E\n6. Take the top piece of your fabric sandwich off and set it aside. Lay one piece of ric rac on the corresponding edge of the fabric you still have sitting there. The ric rac should lay completely on top of the fabric with the edges of the bumps lined up with the edge of the fabric. They shouldn't hang over or not go quite far enough. Line them up as exactly as you can. Also worth noting: the fabric is right side up at this point. You are literally just placing the ric rac on top of the fabric. Repeat with the other three pieces of ric rac.\u003Cbr \/\u003E\n7. Now take the other piece of fabric (the one you set aside earlier) and lay it face down on top of the fabric and ric rac. All of the edges should match up perfectly, and the two pieces of fabric should have their right sides together.\u003Cbr \/\u003E\n8. Pin the fabric\/ric rac sandwich together, making sure the pins are going through the ric rac too.\u003Cbr \/\u003E\n9. Sew the sandwich together using a 1\/4\" seam allowance. Start in the middle of a side, not close to a corner, and leave a 3\" gap.\u003Cbr \/\u003E\n10. Trim the corners, turn the napkin right side out, and use a knitting needle or turning tool to make the corner nice and pointy.\u003Cbr \/\u003E\n11. Press the napkin so it is nice and smooth. Be sure to fold and press the fabric at the gap so that it matches the rest of the seam on that side.\u003Cbr \/\u003E\n12. Use a hand needle and thread to carefully close the gap in the seam.\u003Cbr \/\u003E\n13. I hope you're all wearing green and eating delicious food today!\u0026nbsp;When I started planning out what recipes I wanted to post this month, I thought it would be fun to make all of the foods green. But in light of the fact that only one recipe from the entire month of March thus far has been green, I'm not doing a very good job of sticking to my plan!\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nI had the idea for lime bars knowing full well that they wouldn't be very green without the help of food coloring, and I just didn't want to go that route. I knew what color they would be without the food coloring, and it's just too gorgeous a color to mess with. Thanks to farm-fresh eggs, I give you lime bars that, instead of being green,\u0026nbsp;are the most stunning, vibrant shade of deep marigold. These bars are so sunny, they practically glow! The beautiful color really matches the tart, sunshiny flavor of these little gems. And these particular lime bars are made extra-special by a tasty topping of toasted coconut. So I can't give you a green dessert today, but I can give you fair warning that if you make these toasted coconut lime bars, you might end up eating half the pan. Quite happily.\u003Cbr \/\u003E\n\u003Ca name='more'\u003E\u003C\/a\u003E\u003Cbr \/\u003E\n\u003Cbr \/\u003E\n\u003Cdiv style=\"text-align: center;\"\u003E\n\u003Cspan style=\"font-family: Great Vibes; font-size: 200%;\"\u003E\nToasted Coconut Lime Bars\u003C\/span\u003E\u003C\/div\u003E\n\u003Cdiv style=\"text-align: center;\"\u003E\n\u003Ci\u003Eadapted from the America's Test Kitchen Family Cookbook\u003C\/i\u003E\u003C\/div\u003E\n\u003Cdiv class=\"separator\" style=\"clear: both; text-align: center;\"\u003E\n\u003Ca href=\"http:\/\/www.flickr.com\/photos\/82729110@N07\/13211936523\/\" style=\"margin-left: 1em; margin-right: 1em;\" title=\"toasted coconut lime bars by luluthebaker, on Flickr\"\u003E\u003Cimg alt=\"toasted coconut lime bars\" src=\"http:\/\/farm3.staticflickr.com\/2770\/13211936523_80d624433d_z.jpg\" height=\"427\" width=\"640\" \/\u003E\u003C\/a\u003E\u003C\/div\u003E\n\u003Cbr \/\u003E\n1 cup flour\u003Cbr \/\u003E\n1 cup sweetened coconut flakes, divided (Really pack it in when you measure it.)\u003Cbr \/\u003E\n1\/3 cup powdered sugar, plus extra for sprinkling\u003Cbr \/\u003E\nsalt\u003Cbr \/\u003E\n12 Tablespoons unsalted butter, cut into 12 equal pieces and softened\u003Cbr \/\u003E\n7 large egg yolks\u003Cbr \/\u003E\n2 large eggs\u003Cbr \/\u003E\n1 cup plus 2 Tablespoons sugar\u003Cbr \/\u003E\n2\/3 cup fresh lime juice (about 6 limes)\u003Cbr \/\u003E\n1\/4 cup lime zest (Zest your limes before you try to juice them.)\u003Cbr \/\u003E\n3 Tablespoons heavy cream\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nPreheat oven to 350°F. Line an 8- or 9-inch square pan with foil, leaving enough hanging over the sides that you'll be able to lift the lime bars out using it. Spray the foil with nonstick spray, and set aside. In a food processor or stand mixer, combine flour, 1\/2 cup coconut flakes, powdered sugar and 1\/2 teaspoon salt, then add 8 Tablespoons of softened butter. Blend just until mixture gets sandy. Press firmly into the bottom of the prepared pan, and bake until golden, about 20 minutes. While the curst is baking, place the remaining 1\/2 cup coconut flakes in a small baking dish, and bake until toasted, 15-20 minutes. Meanwhile, combine egg yolks and whole eggs in a nonreactive saucepan. Whisk in sugar, then lime juice, zest, and a pinch of salt. Add remaining 4 Tablespoon butter and cook over medium-low heat until mixture thickens and heats to a temperature of 170°F.  Strain mixture through a fine-mesh sieve into a nonreactive bowl and stir in cream.  Pour warm lime curd over hot crust.  Bake until curd is set and jiggles only slightly, 10 to 15 minutes. \u0026nbsp;Sprinkle toasted coconut evenly over the bars as soon as they come out of the oven. Let cool completely on a wire rack before removing from pan and cutting.  Serve dusted with powdered sugar. I didn't want to make leaf \u003Ci\u003Eornaments\u003C\/i\u003E this month, mostly because leaves don't \u003Ci\u003Ehang\u003C\/i\u003E from trees, so I attached some wire to each paper leaf and used it to firmly attach the leaves to the branches. Cut paper leaves out of green card stock. If you have a die cutter, feel free to use it. Since I don't, I just free-handed them, and it really only took a few minutes.\u003C\/div\u003E\n\u003Cdiv class=\"separator\" style=\"clear: both; text-align: left;\"\u003E\n2. Cut a 5\" piece of wire to go with each leaf.\u003C\/div\u003E\n\u003Cdiv class=\"separator\" style=\"clear: both; text-align: left;\"\u003E\n3. Hold the leaf and wire together with one end of the wire matched up with the pointy end of the leaf, as pictured in the photo below.\u003C\/div\u003E\n\u003Cdiv class=\"separator\" style=\"clear: both; text-align: left;\"\u003E\n4. Carefully add a line of hot glue over the wire, and hold it for a few seconds until the glue begins to cool and the wire is stuck to the paper. You can alternately lay a leaf on the counter, put a line of glue down the center of it, and lay the wire on top of it. I honestly used both methods and they're pretty much equally easy.\u003C\/div\u003E\n\u003Cdiv class=\"separator\" style=\"clear: both; text-align: left;\"\u003E\n5. Continue gluing until you have as many leaves as you'd like. I made two dozen leaves for my little tree.\u003C\/div\u003E\n\u003Cdiv class=\"separator\" style=\"clear: both; text-align: left;\"\u003E\n6. When all of your leaves are complete and all of the glue has dried, attach leaves to the tree by placing each leaf against a branch and wrapping its wire around the branch several times. I really look forward to these challenges, and feel like every recipe so far has been a total winner. This month, Melanie chose our three ingredients: chocolate, coconut, and caramel. You really can't go wrong with a combination like that, but I actually had a really hard time figuring out what I wanted to make. Pretty much every recipe I thought of was kind of boring, like, \"Been there, done that.\" And then it occurred to me that I didn't need to reinvent the wheel with this. I could just take something that's already delicious, like a brownie, and make it a little special. Because who doesn't love a dressed-up brownie?!\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nI started with my favorite from-scratch brownie recipe, and topped it with homemade caramel, sweet coconut flakes, and crunchy pecans. The brownie layer is dense and fudgy, and the topping is chewy and sweet, and sticks to your teeth in the best possible way. Line an 8\"-square baking pan with foil by tearing off two long sheets of foil, and laying one up-and-down and one side-to-side across the pan. Make sure extra foil is hanging out of the pan to make it easy to lift the brownies out after they cool. Spray the foil-lined pan generously with nonstick cooking spray. Melt the butter and chocolate together either on the stovetop or in the microwave. Beat sugar and eggs together in a medium bowl, then add vanilla, baking powder, salt, and chocolate mixture, and stir to combine. Add flour and stir just until the flour is all mixed in. Pour the batter into the prepared pan and bake for 22 minutes, until a toothpick inserted in the center of the brownies comes out mostly clean. Set the brownies aside to cool.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nWhile the brownies are cooling, make the topping. Combine sugar, corn syrup, water, and salt in a small saucepan with high sides. Heat over medium, stirring, until sugar is dissolved and mixture comes to a boil. Allow to boil without stirring until the mixture turns a golden, honey color. Remove from heat and immediately add cream. After the mixture stops sputtering, add the vanilla and whisk until smooth. If the caramel has seized, just keep stirring it, and heat it again gently if necessary, and it will smooth out. Stir in pecans and coconut, and spread topping evenly over brownies. Allow everything to cool completely. If you're impatient, stick the pan in the fridge to cool them more quickly. When the brownies are cool, lift the brownies out of the pan using the foil lining.
